I grew up in a very Latin household. Both of my parents are from Nicaragua. This means I grew up with some amazing traditional Nicaraguan meals on a regular basis. My mother has had part time jobs here and there, but her main career was being an incredible stay-at-home mom to my brother and I. Every single day she would cook for the entire family, and her meals are DELICIOUS! We were SO lucky! With all of here cooking experience I had to share some of her talents with the world!

Here is the recipe for the Cabbage Salad. It lasts in the fridge for a while, and can be a side dish for anything. I like to throw it on eggs with some sliced avocado, or use it with healthy tacos, tuna salad, roasted chicken thighs. The options are endless!
Cristina’s Ensalada De Repollo (Cabbage Salad)
1 Green or red cabbage (or mixed) thinly sliced
2 fresh tomatoes (diced)
1 small yellow onion (diced into small pieces)
1/4 cup cilantro (cut up into small pieces)
Juice from 1 lime
1 tbsp Olive Oil
1 tsp Salt
– Add the tomato, cilantro and onion together in a bowl
– Add cabbage
– Add the remaining ingredients and mix.
Serve and enjoy!
