Vanilla Chia Seed Breakfast Pudding

Are you someone who skips breakfast regularly, and then makes some, well, not so good choices because your freakin’ ravenous. Well, I have just the recipe for you! This recipe is a part of the Reignite and Shine Bright Program and is light, simple, nutritious and delicious. It is perfect for the light breakfast eater. It’s my favorite breakfast recipe right now, because of its convenience.

Vanilla Chia Seed Breakfast Pudding


Serving Qty: 2

Serving Size: 1 cup

2 cups unsweetened almond milk
1/2 cup chia seeds
1/2 tsp. vanilla extract
1-2 tbsp. pure maple syrup or raw honey
1/2 cup mixed berries


– Combine almond milk, chia seeds, vanilla and sweetener in a bowl and mix well. Leave in fridge overnight or at least an hour.

– Stir well and mix in fresh berries.

Healthy Tip: This makes 2 large servings. You can keep it in the fridge for up to 5 days. Enjoy!
